3 cups dry macaroni
Cook the macaroni according to the package directions.
In your blender dump the following:
1 can coconut milk (I find this with the Asian foods)
1 1/4 cups water
1/4 cup yeast flakes
2 tsp. salt
1/2 cup cashew pieces
1/4 cup pimentos
3 Tbsp. lemon juice
1/4 cornstarch
1 tsp. onion powder
Blend these ingredients about 2 minutes until very smooth. Drain cooked macaroni and return to kettle. Pour blended mixture into hot, drained macaroni and cook together until thick.
You could eat it now, but I prefer to put it into the casserole dish and cover it with Italian bread crumbs. Then I bake it for 20 minutes at 350 degrees or until the top is crisped up.
This is Charles' favorite seasoning to sprinkle on top. You can find it at......Walmart. But watch out it has a kick.
This is embarrassing, but I am just now getting to look at this recipe. I think I will TRY to make it tomorrow. (I said that a few days ago, but life happens ... )
