Friday Night Sabbath Seder Chicken Soup

Shopping List for Soup:

1 large onion
2-3 carrots
2-3 cloves of Garlic
2 Tbs. Butter
1/2 of a 2lb. 10 oz. can of Fri-chick
Basil
Thyme
 3/4 -1 c. of frozen Spinach
2 Potatoes
6 c. Water or One large can of Swanson's Chicken Broth
1/4 cup of flour
 McKay's Chicken Style Seasoning

For the dumplings:

 2/3 c. All-purpose Flour
1/2 tsp. Salt
1 tsp. Baking powder
1 tsp. basil
 2 Tbs. Olive Oil
1/4 cup milk (Coconut milk or whatever milk you use works great too)

1 large onion
2-3 carrots
2-3 cloves of Garlic
2 Tbs. Butter

First I dice all these veggies very small.  This seems to be key in my family, none of us love big chunks of veggies.  However, when I tried using the food processor everyone thought the pieces were to small.  I put all of these veggies in the pot with the butter to cook for a few minutes.  Just be careful not to let the butter burn, something I have been known to do.

1/2 of a 2lb. 10 oz. can of Fri-chick
Basil
Thyme

I dump half of the juice into the cooking Veggies and set aside 8 pieces of Fri-chick.  Then I put the rest of the can in the fridge for next week.  I sprinkle Basil and Thyme across the top of the pot.  Probably at least 1 - 2 Tbs. each.

3/4 -1 c. of frozen Spinach
2 Potatoes
6 c. Water or One large can of Swanson's Chicken Broth
1/4 cup of flour

Chop the spinach and dice the potatoes and throw them into the pot.  Mix your flour with your water or chicken broth make sure there is no flour lumps.  Pour mixture into the pot, if using chicken broth please know there is no explosive reaction that takes place when the Fri-Chick and the Chicken broth meet.

 McKay's Chicken Style Seasoning

If you did not use chicken broth add McKay's Chicken Style Seasoning to taste.  It takes quite a bit.  I have never measured it, but don't be afraid to dump it in.

Cut up your 8 Fri-chick pieces and dump them in.

Next are the dumplings:

2/3 c. All-purpose Flour
1/2 tsp. Salt
1 tsp. Baking powder
1 tsp. basil

Mix these ingredients. Then add:

2 Tbs. Olive Oil
1/4 cup milk (Coconut milk or whatever milk you use works great too)

Mix together and roll into 1/2 tsp. sized balls and drop them into your soup if it is boiling.  Otherwise wait for it to boil.  Once your dumplings are added put the lid on and simmer until Sabbath is here.
