Okay, Charles, here it is. Sorry, no pics right now. But believe me that it was colorful!
Take whatever veggies you have on hand, cut them in bite-sized pieces, and throw them in a large plastic bag. Add whatever seasonings you like, some olive oil and salt, close up the bag, and shake it like crazy, coating all the veggies really well.
Pour it all out in a good-sized pan, pop it in the oven at 425 degrees for about 30 minutes, let it roast, and then enjoy sinking your teeth into healthy goodness!
Today's veggies and ingredients were:
3 red potatoes
5 carrots
3 zucchini
2 cloves garlic
salt
olive oil
Some days I marinate some tofu for overnight and then throw that in. I've also used garbanzo beans, cauliflower, sweet potatoes, onions, peppers. You get it. For seasonings, I've used fresh rosemary, thyme, McKay's chicken seasoning, etc. All quite yummy!
