Cheeses

Hi Everyone! Better late than never. I told Heidi if I was going to post WITH PICTURES it would probably never happen. So hopefully just words are fine. Maybe someday I will become camera and computer savvy enough to figure out how to do more!

Anyway, here are 2 cheese recipes that I use. You all may already have them, or you may have something better in which case I would love to have the recipe!

Cheesy Sauce

  • 1/2 cup cashew nuts (I put nuts in a bowl and cover with a small amount of water and microwave for about 30-60 seconds to soften nuts - thanks for the tip Aunt Shirley!)
  • 2 Tablespoons sesame tahini (optional - I used)
  • 3 cups water
  • 1 Tablespoon lemon juice
  • 1/3 cup pimentos or diced red peppers (canned) (I used fresh red bell pepper)
  • 1/2 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 1/2 teaspoon salt2 Tablespoon yeast flakes
  • 2 1/2 Tablespoons cornstarch

(1) Blend all ingredients until very smooth.
(2) Place in a saucepan and bring to a boil while stirring.

Sliceable Cashew Cheese
  • 2 cups cashew nuts (softened with water in microwave as above)
  • 3/8 cup Emes Kosher Gel (I cannot find here so I just use any unflavored clear gelatin or fruit pectin)
  • 1 1/2 cups boiling water
  • 2 Tablespoons lemon juice
  • 2 Tablespoons yeast flakes
  • 1 Tablespoon salt
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1 cup cold water

(1) Place all ingredients in the blender except the 1 cup cold water. Turn on and blend for 1 or 2 minutes until very smooth. Be sure to cover blender so it won't splatter out. (2) Add 1 cup cold water, blend briefly and pour into containers of your choice to chill and slice when firm. I also freeze and then grate it but it is quite "crumbly" and more "mushy" but it works.

Hope you enjoy!!!
